Caramel Apple Ginger Spiced Upside-Down Cake
FOR THE CAKE
2 Cups of All purpose Flour (Sifted)
3/4 Cup of Sugar
4 eggs, lightly beaten
1 Cup of Unsalted Butter (plus an additional 1 tsp. for greasing pan) Soften to room temperature
2 tsp. Baking Powder
2 tsp. Vanilla Extract
2 Tbsp. Grated fresh Ginger
1/2 Cup Evaporated Milk
FOR THE TOPPING:
2 Tbsp. Unsalted Butter
1 Cup of Organic Sugar
3 tsp. Ground Cinnamon
1/4 Cup Whip Cream
1tsp. Vanilla Extract
FOR THE APPLES:
MAKING THE CAKE:
In a bowl combine the Flour, baking powder and set aside.
In a stand mixer with a the paddle attached, beat the butter and sugar on medium speed until smooth and creamy, for about 10 minutes. Using a rubber spatula scrape the side of your bowl to get the butter to the bottom of the pan beat again for a few seconds. Then add your eggs one at time and beat well on medium speed. Your batter should be nice and smooth. Set aside.
MAKING THE CARAMEL APPLES:
In a Saucepan heat the butter on medium heat until melted add your Organic Sugar. Then add your peeled and sliced apples—That you slice into thin circles to your saucepan cook them until slightly tender take them out the pan and place on a plate. Then create your Homemade Caramel. Butter, sugar, 1/4 of heavy cream, 2 Tbsp. of water and cinnamon. Cook this in heavy bottom pan until your Caramel has thicken and have a nice amber colour. Add 1 tsp. Vanilla Extract, and your grated ginger and take off the heat.
In a 9 Inch Bake pan that is well greased cut and fit Parchment Paper in your pan. Spoon half your Caramel on the bottom of the pan on your parchment paper then place your sliced apples on top. once you are finished spoon the remaining caramel on top of your apple slices. Now, pour your cake batter on top of your apple and Bake in your Preheated Oven at 350 degree F for about 40 minutes. Take your cake out the oven when finished and let cool for about 20 minutes. Turn your pan upside down on a tray and it should come out smoothly because of your parchment paper. Peel off the parchment paper and your Caramel Apple Ginger Spiced Upside-Down Cake will be ready to serve.
